Weekend plans

So the weekend is here and guess what it's raining :/ so I guess the kids and I will have to find things to do in the house instead, so in the meantime I have prepared some more freezer meals as life has been super busy, sick husband, terrible two toddler (she is still cute) and schooling 5 kiddos, the older 4 have there own routine so it's mostly Savannah that needs that one on one,.
Hubby always works a double on Saturdays so I try not to plan a lot of things as I know it's just the kids and myself, if it's not too wet I might try and take them to the park to run there energy, but I think it will be a marathon of Disney movies, popcorn and a freezer meal..... We all know Legos and princess parties shall be held too😊. I do have some projects due for school for myself so I will take that time and do that, so let me share some more meals I prepped.

Made some meatloaf to go in the freezer, so that can be real handy and just made some mash potatoes and veg to go with it.

Also made some Asian style pork chops to put in the freezer and all I would need is to take it out that morning and it will be ready to go in the oven by dinner time.
Couldn't let the day go by and not make some treats for the kiddos, so we made some banana cupcakes and a lemon pound cake.
For dinner it was some grilled chicken thighs with veggie rice and salad.
 Tomorrow I will be making some dinner rolls and cinnamon buns and I will be filming it so be sure to look out for that.

Ready! Set! Go!

Today is Wednesday and i already have my days all mixed up, so my husband's day's off changed this week not by choice so he no longer has Wednesday and Thursday off but he has Tuesday and Wednesday off, to some it may not seem like that's a problem but when you are used to that schedule and days for the last 4 years it seems more of a inconvenience then anything else!
i normally do my groceries on Thursdays as my husband is home so he either comes with me or stays with the kids, I've been doing this for a long time, normally we will pick a field trip for the kids to do for school and that is normally Wednesday as then we still have Thursday, yes yes i know all i have to do is switch days but its more than that, as now all the days are crazy!! just like anything else or change we will get over it and plan around the new days, i guess its just my way of venting.

What has been happening here? well poor hubby has a really bad cough and sore throat so he has been a little down and still working, kids have been trying to play the game to get out of school..... little monsters LOL but this Mama is not having it, my insomnia seems to be dying down a little so that is great news, but now its so much harder to get out of bed, the life of a diabetic, the ups and downs.

I am going to give Atkins another shot just not all the food they want you to eat, last time i tried it, well lets just say i could barely stand i was so dizzy.
We seem to be settling back into the routine other then that, we are planning our field trips ready and between us, YES we are planning another Disney Vacation pretty soon, but there are other things going on right now so its just a waiting game.

All kids have dental check ups next week so that should be fun!! and the two older boys have eye exams too, i cant believe how fast they grow, sometimes i look at them and ask myself how on earth did he or she get so big? have i been sleeping? i have to say all stages have there own new complications..... but its all part of life and with the lords help we will get through these teenage years.

i made some more freezer meals today, i made another Shepard's pie and meatballs it helps when all you have to do is pull out a meal and heat it, especially right now when its all hands down with Savannah, i am pretty happy with her reading, she is only 6 and her memory is amazing, we will read it together and then even a few days later she will remember all the words.
i wish potty training was going so great, Madison don't want to have nothing to do with the potty, she says it hurts her, so now we are on the hunt for a wider potty in the hope that she will be OK with that.
its funny when she looks at it, she is so disgusted with it, looks at me and says no mommy i am not sitting on it.

 well guys it dinner time and i still have to check in with my classes and check the kids work for today, they have been to the park and they are ready to eat, so then its bath time and hubby and i get to spend some time together. so excited Empire is back on tonight..... Freezer meals!

I don't know about you, but my day can be a little crazy,long and lets just say sometimes cooking can be a pain in the neck!
So while my sweet husband worked a double yesterday I took the time to prep some freezer meals, not only for dinner but for lunches. 
Ok so you know we have six kids right? But did you know the kids are not the picky eaters but my husband is? Yep! 
So we made some tater tot casserole (my version) 
We made 2 and freezed them, my husband does not like tater tot casserole 
So I normally will pull one out on weekends as hubby normally works a double on Saturday every week, or for lunches. Also made some shepards pie, and sausage and biscuit bake, I made 2 of each so that gave me 6 meals or lunches depends. I would of made more freezer meals but I had a lot of school to catch up with, especially assignments. I also had to check the kids grades for that week! 
So it's Sunday now and almost 10:30am I got dinner in the crock pot, laundry going, kids playing and hubby is at work till 3pm so after tidying up we might head for a walk or to the park for a little, but to be honest I hate going to the park on weekends there are way too many people and the kids don't enjoy it that much. 
Or maybe we will be lazy and get a disney movie and watch, that's always fun!

We skipped school

Yes we did, it was a beautiful day and we were all so bored in the house, we started our school but just couldn't get into it, so what did this mama do? Gave her kids the day off and rolled out to the park, YUP judge away if you may. 
I love home schooling as it always gives us the option to do things, we school mostly all year and normally just take a month of in summer for our vacation so the kids are always ahead so when days like this come up I know that we are just fine. So after the park I stopped by and bought them some Mcky d's and we bought a new CD to listen to! Princesses to be precise, so now we are jamming to a whole new world' get it?

That gave this mama some time to catch up on her on school. Well all in all it was a good day, we laughed we played we ate what more could you possibly want right?

some new things!!

hey guys!

how is every one's weekend going? as for mine it was fine till someone made me aware that my face book was hacked. i guess my page was posting i don't know what, you have to laugh it off as other wise it will stress you out!!
for some reason Madison is really cranky today, she has just been hitting and then hugging, truly weird, but the news yes the news. the news is that we have finally decided to go ahead and start a YouTube channel, i am not fully committing to this as the next few months are super busy for us, with home school, my schooling and getting stuff straightened to move and trying to fit some other things in too, but this has been a want to do for a long time but between you and i, people who really know me know i am shy and i hate the camera so its going to be hmmm shall i say awkward, but i am willing to give it a shot and please my husband.
one thing that my sweet hubby said was that i should share my journey, i am starting a new diet to loose weight and its super hard when your a diabetic its like the weight just clings to you and don't want to go, but i need to do this for my health, especially if we want more kids.  so i will be blogging and vlogging about this and sharing day by day and week by week of the results.

today has been a really chill day, its been stormy outside dark and a little cold so the kids are all comfy in there pj's playing and watching movies, its just a really sleepy day ad its OK!! Maddie on the other hand wont leave me and insists on being held all the time. poor hubby is working a double and wont be home will 1130pm only to be back up at 5am to go back to work, this is the only thing about the weekends daddy is never home, we are blessed he has a job but we also miss him on weekends, today is a soup day so everything is easy and everyone is just having a chill day, well there not much to do anyway in this type of weather.

basic pizza dough

here is how I make a quick rise home made pizza dough!!

in your mixer or bowl add 1 cup of warm water with 2 tablespoons of sugar, then add a packet of self rise yeast or 1 tablespoon of powder yeast.
stir and let sit for 5 mins.......
once you see it foam then you know its alive and your good to go, add 1 teaspoon of salt and 1/2 cup of olive oil, stir or mix until its like a pancake mix.
Next start to add your flour, it all depends on how humid it is but sometimes I will use 5 cups sometimes 7 cups, so start with 4 cups of flour and another half cup of warm water, blend with your dough hook or by hand.
keep adding your flour till your dough has a bouncy consistency and you can roll it on your counter without it being sticky. let it stand for 20-30 mins and you should be good to go..... I make chocolate pinwheels for the kids with this dough, I also make cinnamon buns for them too.

so in all these are your ingredients.

1 1/2 cups of warm water
1 packe yeast
2 tablespoons sugar
1 teaspoon salt
5-7 cups of flour

WHAT'S FOR DINNER???

Don't you just get days where you just don't want to do anything?  i sure am having one, it's probably cause i am just getting over being sick so i am putting it down to that. it has also been so hot that its crazy for September. we don't have this type of heat this time of year. i had to run to Costco this morning and even with AC running i felt really dizzy. i cant wait for the fall to set in.
SOOO what did everyone have for dinner? well today my husband was home his days off are Wednesday and Thursdays so he mostly cooks on those days, which is nice and it gives me more time with the kids, today we had rice and beans with sweet chili chicken and a spinach salad, i enjoyed my meal very much, for lunch we had creamed broccoli,carrots,and spinach soup, weather its 100 degrees or 30 degrees soup is a favourite in our house, the only one who don't really eat soup is my husband, so he will always have something else, i always make different type of soups and the kids love them especially with there oyster crackers!!

our rest of the week and next week meal plan goes as is:


  • Thursday- Sheppard's turkey pie
  • Friday- tater tot casserole
  • Saturday-chicken Greek pizza
  • Sunday- roast chicken with roast potatoes and veg
  • Monday-spaghetti and meatballs (soup for me)
  • Tuesday-turkey burgers on brioche buns with HM potatoes wedges 
  • Wednesday- pork chops and mash with peas
  • Thursday- take out pizza
  • Friday- chicken and gnocchi soup
  • Saturday-HM pizza wheels
  • Sunday- chicken parm with mash and veg

Meal planning for me is really essential, with homeschooling and keeping a budget and most of all i hate waking up and not knowing what i am making for dinner, its easy for the kids to see on the meal plan board what they are eating that day and i don't get mom whats for dinner multiple times a day LOL.
 i do have those meals planned but i am flexible on the days, they don't need to be on that day, i have so many days done so i know i have those meals ingredients in the pantry and freezer. lunches are pretty simple, its basically bread,bagels,croissant, or soup, with fruit, yogurt and a sweet treat i always ask them what they would like, so i always have on hand, peanut butter and jelly- apple butter- nuttella- ham and cheese, 3 fruits we always have on hand are grapes, apples and bananas and that's cause those are the most ones that get eaten, i but several types of fruit but that's normally every 2 weeks and we will do a fruit salad with them. always have multiple type of snacks, for the kids and hubby, they all have different likes and that's ok. mornings are pretty simple and stress free, its either cereal, oatmeal or bagels, maybe once a week we do waffles or pancakes or crepes. i always shop for at least 3 weeks even though i do it every 2 weeks, i just like to make sure that if something happens i am covered for a few more days.


MIA

I haven't given up on my blog, what I have been is super sick in bed for the past 4 days. It was so bad that I couldn't even raise my head from the pillow. I have to say my poor husband got sick too and poor thing only managed to get two days in bed he had to get back to work. Our eldest daughter really took care of us, God bless her. Well all the kids tried to help in there own way, I have to say that we are very blessed to have amazing kids. Our school year just started and we already lost 3 whole days of schooling due to me being sick, luckily we will have more then enough time to make it up. We started back again today as yesterday was Labor Day, so we did half a day. It was an all hands down with Savannah so it took a lot from me, but we made it through. With my own classes it can seem overwhelming but I guess it's just another task too!

The weather has been outrageously hot, so hot that even the kids want it to get cold, normally mine are all up for going outside and having some play time or jumping on the trampoline, but nope they just want to stay in where it's cooler. 
It's funny it always gets really hot in September just right before it cools down, I'm so ready for fall, there are people who love summer but I have to say I am not one of them.
Due to being sick my meal plan went out the window the last few days and easy quick meals were made, I have been living off the boxed sachets of chicken noodle soup, they have been my life saver, especially with my throat so sore. I am looking forward to start sharing some school crafts we do now that holiday season is coming our way. Well I will you at that! Thanks for reading and as always God bless

Disney's Animal Kingdom Review

Animal kingdom was a great park,as soon as we walked in we got to see daisy in her safari adventure costume. We got to take pics and all. Moving forward we met Tarzan, looked quite like him too 😀, took more pics and so on.....
So let's get to the review!
The park itself was the smallest one from the four, i liked it as I love animals myself, I enjoyed the exhibits and watching the animals, now as far for my two youngest 2 and 5 they didn't get that much fun from it, they were kinda bored which I could see why. The little ones really enjoyed finding Nemo the musical though and to be honest I really did to, they put on one heck of a show.
We also enjoyed https://disneyworld.disney.go.com/entertainment/animal-kingdom/character-meet-rafiki/ rafiki planet watch.
We did have FP (fast pass) for Kali River Rapids but it rained (again) and that was cancelled. We went on the https://disneyworld.disney.go.com/attractions/animal-kingdom/kilimanjaro-safaris/ kilimanjaro safari and that was pretty great, though one part scared the crap out of us, which was going over the bridge and they made it seem like we were gonna fall off!
We also watched the gorillas who are so adorable.
Hubby and the older kids did go on, https://disneyworld.disney.go.com/attractions/animal-kingdom/primeval-whirl/ primeval whirl, they enjoyed it. They also went on https://disneyworld.disney.go.com/attractions/animal-kingdom/expedition-everest/ expedition Everest,  we also enjoyed https://disneyworld.disney.go.com/entertainment/animal-kingdom/burudika/ it was fun and entertained us. The food was also good in the park and we didn't have complaints, but as soon as 3-4pm came it poured down and everything was shutting down, so we decided to call it a day too.
What I loved most about this park was its knowledge tree and finding Nemo was really awesome, I highly recommend watching this play if you go there. We also did walk the trails and they were (hot) LOL it was a super hot day, we also enjoyed watching all the elephants,Tigers,and so many more. The lion king festival was great too, even though we didn't watch it all. By the time we were scheduled to head over to Dino land it was over due to the weather, super disappointing but Mother Nature don't have no schedule.
So overall it was a great park, small and enjoyable for the most part.

2 week grocery haul for a family of 8

We go through quite a lot of groceries in our house, breakfast,lunch and dinner plus snacks! That's for 8!
On average we go through about $700-$800 a month on just food. That don't include household or pet. There has been times where I can spend about $500 with coupons, but today was not one of those days, I normally do groceries every 2 weeks, I use to do it weekly and monthly but I always seem to spend more. So doing it every two weeks works.

Today I had a doctors appointment on the other part of town so I went to trader joes I only go there when I'm in that area as it's an hour away. So at trader joes I ended up spending $107.29 which wasn't too bad, after that I went to target which was mostly home and personal supplies and spent $79.43. I did use cartwheel and a few coupons here. My next stop was Aldi and that came to $95.99 which is not bad for a filled cart. My last and final stop was Costco and there it came to $198.82.  So my whole total for my two weeks came to $481.53, my next haul will be in two weeks, this time I stocked up on multiple snacks so I won't need that many next time. Included was pet food and some household so it wasn't really bad. I also included a frozen throw for Madison which was almost $14 and that was not in my budget, so in all I'm satisfied.
I have my meal plan made up for two weeks which includes breakfast,lunch and dinner. My kids snack on fruit or yogurt sometimes crackers or a sweet treat if I buy.
My husband also takes his lunch to work, so I include other things for him.
I also went and put 70% of the kids wish list on layaway at toys R us today, I'm very confident that they are gonna love there presents. I still have some other items that I could not find there to hunt down, I like to beat the crowd, I try to get all my gifts done by November that way I find mostly what I'm looking for, and to be honest I hate the rush, I don't like shopping when there's crowds,that's one big reaso I don't do Black Friday!

Alpha omega switched on school house review

We have six kids as I'm thinking you have guessed 😉, well for our homeschooling curriculum for four we use a program called alpha omega switched on schoolhouse https://www.aop.com/curriculum/switched-on-schoolhouse?gclid=CjwKEAjwmZWvBRCCqrDK_8atgBUSJACnib3lKjRtpSUPz2CC9w3mFOhCCS4XcvOaJAf6O2NxI6i0aRoCgNPw_wcB link is right here for you to check it out.
One major reason I choose this curriculum was, because it freed up my time, having all kids in different grades and trying to keep up with everyone at the same time just wasn't working, we were stressed and tired and mama was super cranky!
I loved how it took all the grading from me, and did it for me, the kids have there own student portal and I have my teachers portal, so whatever they do I monitor and generate the grade it reports. I love how it has official transcripts too.
It supports grades 3 thru 12 and college. The same company AOP (alpha omega publications) has other curriculums for that age, so how does it work.
So when you buy the package it comes with disc to install on your computer, our children have there own laptop for school so there is no confusion. Once you install and register your product with the school you are good to go and your child can get started. It will walk you and your child throughout the process. They have tutorial for the kids on how to do there school work and it also speaks and reads them there chapters once at a time just like a teacher would do in class.
It will show you how to do your problem and give you the ability to skip that question so that the teacher (mummy) can view it and work on it with you.

I sincerely love this program, it has given me so much time back which helps me do schoolwork with my 5 years old and 2 year old (Madison school is drawing ) it gives me the time I need with Savannah for her to lean to read and write. I will do a review on what we use for her in another blog.
Don't get me wrong the kids are always asking questions, or needing something and I am fine with that, but it has taken a Huge load of my shoulder by grading and explaining the lesson to them.
Once each term is completed you can send for the grades Or print them out just like you would have in school, pretty awesome huh!!
Another thing I love about AOP is all there electives they have, currently we own business management, French and Spanish. They come in 4 disc and 5 disc the difference is the 5 disc has the bible included with it.
So even though it is a computer based school, you still have the option of printing out your work, sometimes we will especially for our 9 year old. It's completely optional.
This is our second year using it, I have no plan on changing there curriculum no time soon, we are very happy with it after trying out so so many curriculum's. The kids enjoy and love it themselves and Re very happy, they have learned more on this then anything else.
So for our family they get a 5/5 its definitely worth the money. Which I forgot to mention can be a little pricey but once you compare it to other things it pretty worth it in the long run.

Disney magic kingdom park review

Once people knew we were heading that way, everyone told us that it's the best park and it would be our favorite.i have to say that it was not!!
we did go in the heart of summer so that could be a reason too, but the park was over crowded and horrible, all rides had outrageous waiting times and lines, couldn't sit no where to eat, there was way to much confusion, and after you wait for an hour with little kids the ride is only 5 Min's if that, i was extremely disappointed, will i go back, oh yes but never again in august.
we had fast passes all set and ready to go, and as like any other day it rained so the ones that were outside got cancelled which is understandable but i was not able to redo fast passes on my phone on the Disney app, which is really irritable, we were also told once we use the fast passes that day we can do more and the app again would not let me add fast passes. it was so stressful that i just gave up.
the one fast pass that wasn't canceled was meet and greet Rapunzel and Cinderella and even with a fast pass we waited over an hour, obviously with two little princesses of my own i couldn't leave but everyone was irritable including other kids, so for over an hour wait they were rushing us to hurry and snap the picture to leave, which is unfair as the girls waited forever to see them. i think they should of at least gotten 5-10 minutes.

now don't misunderstand me magic kingdom is amazing but there lines and waits are crazy, and when you have multiple children at all different ages its hard for everyone to understand they have to wait, and kids hate waiting. i myself was irritable from all the waiting.
magic kingdom has amazing rides i just wish the kids would of got to enjoy them more rather then wait over an hour for each ride even with fast pass and then go to the next and wait again, therefor they didn't enjoy themselves too much at magic kingdom, i really hope on our next trip its better.

as far for dinning, we had the quick serve and we couldn't get in no where everywhere was so crowded, the lines were out the door, and when you have hungry kids and a husband we all know you gotta feed them or else!! so it took us forever to eat.

the most enjoyable thing was actually the old steam line train, it was actually the least stressful thing, the kids enjoyed getting on that while we were switching worlds. from fantasy and frontier and so on.

so how did magic kingdom do? this time around i would have to say not too well due to barely being able to get on anything, and whether you had a fast pass or not the wait was still outrageous. we are hoping next time which wont be August will be much better.
