Vegan Blueberry Muffins

                         VEGAN BLUEBERRY  MUFFINS

WHAT?

YES!! you heard right vegan blueberry muffins and guilt free with no diary.
I have also made a video on this so i will go ahead and link it in here for you guys.





So let me get right into this and help you make them too as i know you are wanting something sweet too.

for this you will need:

2 CUPS OF UNBLEACHED FLOUR
1 CUP OF CANE ORGANIC SUGAR
1 CUP OF ALMOND MILK
LEMON ZEST OF 1 1/2 LEMONS
1 TABLESPOON OF BAKING SODA
1/2 TEASPOON OF SALT
1 TABLESPOON OF ORGANIC APPLE CIDER
3/4 CUP OF VEGETABLE OIL
1 CUP OF BLUEBERRIES

Pre heat you oven to 375 degrees 

In a large bowl add all your dry ingredients and mix together.
Start by adding your oil, apple cider vinegar and milk.
Mix together until you form a nice cake batter. slowly add your blueberries ( make sure you don't Over Mix as they will bleed)  i managed to get 12 by filling them up to the top.

Place them in the oven for about 15-20 minutes, or until a tooth pick comes out clean. to be honest mine took around 25 minutes. i guess it all depends on your oven.

Vegan Curry

                                                            VEGAN CURRY

Lately it's been a little tricky trying to replace some foods that i actually like and some that i love, one of them was curry.
I sat down thinking of many foods that would be good to make curry with and foods that i had in my fridge too. so i found three foods that i had in the house and went with it. i really wanted to add cauliflower to my list but i was out and i sure was not going to go out just for one item so i substituted. so i want to share with you this amazing curry recipe and i hope you enjoy it as much as i did.
this is what you will need:

Half  a head of cabbage
3 potatoes
1 1/2 cup of barley
curry powder
garlic powder
pepper
red pepper flakes
minced onion
1 can coconut milk
2 cups of water

Cut the cabbage into small diced pieces and place it in your pot, cut your potatoes into small pieces too or the size you like, add your barley and your coconut milk and water.
start adding your spices, i left out how much curry and red pepper flakes as everyone has there own hotness they can handle, i actually like mine hot so i add more curry and flakes. i do not add salt due to the fact the curry gives it enough flavor and i sometimes think curry can be salty in itself. i will leave that to you and see how you like the flavor.
i did use quick barley rather then boiling it first so that cut my time in half.
once i added all of the other ingredients i let it cook on medium heat till it came to a bubbling boil then turned it down to slow and let it cook for about 30 minutes till it all thickened up.
Make sure you do babysit it and keep stirring it every 5-8 minutes as the barley doubles in it size.
I do have another version of this with cauliflower and carrots but i was out of both so i went with a new one.
I did enjoy it and i would make it again that's for sure, i just missed those ingredients, but y'all know what its like when you get a craving.
