Vegan Blueberry Muffins

                         VEGAN BLUEBERRY  MUFFINS

WHAT?

YES!! you heard right vegan blueberry muffins and guilt free with no diary.
I have also made a video on this so i will go ahead and link it in here for you guys.





So let me get right into this and help you make them too as i know you are wanting something sweet too.

for this you will need:

2 CUPS OF UNBLEACHED FLOUR
1 CUP OF CANE ORGANIC SUGAR
1 CUP OF ALMOND MILK
LEMON ZEST OF 1 1/2 LEMONS
1 TABLESPOON OF BAKING SODA
1/2 TEASPOON OF SALT
1 TABLESPOON OF ORGANIC APPLE CIDER
3/4 CUP OF VEGETABLE OIL
1 CUP OF BLUEBERRIES

Pre heat you oven to 375 degrees 

In a large bowl add all your dry ingredients and mix together.
Start by adding your oil, apple cider vinegar and milk.
Mix together until you form a nice cake batter. slowly add your blueberries ( make sure you don't Over Mix as they will bleed)  i managed to get 12 by filling them up to the top.

Place them in the oven for about 15-20 minutes, or until a tooth pick comes out clean. to be honest mine took around 25 minutes. i guess it all depends on your oven.

Vegan Curry

                                                            VEGAN CURRY

Lately it's been a little tricky trying to replace some foods that i actually like and some that i love, one of them was curry.
I sat down thinking of many foods that would be good to make curry with and foods that i had in my fridge too. so i found three foods that i had in the house and went with it. i really wanted to add cauliflower to my list but i was out and i sure was not going to go out just for one item so i substituted. so i want to share with you this amazing curry recipe and i hope you enjoy it as much as i did.
this is what you will need:

Half  a head of cabbage
3 potatoes
1 1/2 cup of barley
curry powder
garlic powder
pepper
red pepper flakes
minced onion
1 can coconut milk
2 cups of water

Cut the cabbage into small diced pieces and place it in your pot, cut your potatoes into small pieces too or the size you like, add your barley and your coconut milk and water.
start adding your spices, i left out how much curry and red pepper flakes as everyone has there own hotness they can handle, i actually like mine hot so i add more curry and flakes. i do not add salt due to the fact the curry gives it enough flavor and i sometimes think curry can be salty in itself. i will leave that to you and see how you like the flavor.
i did use quick barley rather then boiling it first so that cut my time in half.
once i added all of the other ingredients i let it cook on medium heat till it came to a bubbling boil then turned it down to slow and let it cook for about 30 minutes till it all thickened up.
Make sure you do babysit it and keep stirring it every 5-8 minutes as the barley doubles in it size.
I do have another version of this with cauliflower and carrots but i was out of both so i went with a new one.
I did enjoy it and i would make it again that's for sure, i just missed those ingredients, but y'all know what its like when you get a craving.

DISNEY'S EPCOT FROZEN FOREVER

EPCOT  has never been a favorite park of mine, i have always found it pretty boring to a point, or maybe there is not much of interest for me? not sure.
So the other day hubby and i had a date and we decided to go there as after months of trying to get on the FROZEN FOREVER RIDE i finally got us a fast pass, can i say it was worth the wait and i cant wait to go back on it, the ride was a whole 5 minute and was AMAZING!!!
i do have the footage of the ride also of me screaming at the drop, yes you guessed i am not a coaster fan.
So anyway if you have been to Epcot and walked round the park you will know you have to walk through country's to get to Norway, so what should of been a left turn passed Mexico we took a right turn and walked the whole park when it was 99 degrees out, as much as i love Disney guys i was hating it, especially when it was just suppose to be a five minute walk, but nope leave it to us to take the 30 minute walk in blazing hot sun, when we stopped i felt everything spinning, ain't that fun ( sarcastic laugh here )
the first thing that comes out of my mouth is I SEE TROLLS, way to go Rose!!! seriously i did see the trolls and right there it said FROZEN.................... can i tell you how happy and no lets go back, how happy i was. it was so cold in there. we were sweating like we just ran a marathon people!!!!

so after going around the park like we did which i haven't done since 2015 i have gained more respect for Epcot, it still don't make the top 2 which is Hollywood and magic kingdom but i think i am going to love it more with that said.
i also would love to mention that if you ever want a blueberry muffin the sunshine seasons in future world has the best muffins ever, what was even more great they were real mushy blueberries if you love blueberry muffins you will understand what i mean. i have some other EPCOT things to share with you about the pressed pennies and some other stuff but that will be for next time.  i also have some very exciting and fun Disney crafts coming up so stay tuned guys.

Changes

hey guys!!

for a few months or more i have been trying to decide what to do with myself, i love being a mom and wife but i am at the stage in life where i need more. i decided on many things but no of them felt right. after praying it finally hit me, there are two things besides my family that i love and enjoy and those are Disney and Writing, so after talking to my husband ( he gives great advice) i have decided to go for it and add those together and just about about Disney and some other things. i know personally when i travel with six kids i can't afford much so i wanted to do some tips and ideas on how to get the most out of everything or even how to plan a vacation when you are struggling. so i hope you guys will come along and join me on this new adventure. i am so excited guys i can't even tell you and i really hope you let me share that with you!!
along with all the Disney magic i will be making time to make at least one craft weekly that is Disney themed off course and also make some cute magical Disney headbands.
i cant tell you how excited this makes me feel, i have always had a great passion for Disney and writing and now to just put them together is a dream. so i will end this on stay very tuned for in the next day or so you will see a post of an official start to a Disney blog. i will still post some things from our channel here and recipes.

complaining?

This week has been a little hard, have you ever had a week when you sit down and actually look deep down and say! Huh you know what I don't like where this is going and then realize that you have no one to talk to or even comsole you.
I was starting to feel a little more content feeling we are closer to become home owners only to find out nope we are even further! Like seriously?.. this ain't even funny
So plan is well don't know the plan and I'm tired of making plans! Like so over it.
Best thing to do is just to save up enough funds and just buy on our own.
Problem is here down in Florida is not as good as up North when it comes to wages, I sure do miss that from Maryland.
Unfortunately we put everything we had into moving and I know I shouldn't be complaining especially you only being here 5 months, I guess I am home sick, or shall I say state sick? LOL is that even possible? Then again only here in Florida do I get to go to Disney weekly or go to the beach every day! See I'm just a confused human being who does not know what she wants,, well I do, it's just not happening.
As I turn to my bible and read inspirational words and find gods warmth I still feel down and just simply confused.
I know the lord has a plan for me and it's not time to uncover it, I just feel alone and emotional.
So I ask you to keep me in your prayers for uplift and positive thinking.
So if you read this without closing the page god bless you for hearing me complain.

Home made baked beans

So I decided to be brave and try my take on baked beans, I mean how hard could it possibly be right. So after researching and finding the "right" recipe I went straight in. So this is what I used and did. As always y'all can find the video on my YouTube so I will leave the link below.

2lbs of navy beans ( soaking overnight)
2 cups of water (yes video says 2 1/2)
1 cup of BBQ sauce
1/2 cup of white vinegar
1/4 cup molasses
1 cup brown sugar
2 tablespoons of mustard paste
1/2 cup to a cup of ketchup
1/4 cup of tomato paste
Crushed red peppers ( optional)
4 slices of bacon cut into small pieces
1 1/2lbs to 2lbs of pork roast (optional)

Just add everything into your crockpot, kinda dump and go here. Recipe I found calls for 6-8hrs well I have to tell ya mine cooked for 12hr on high in the crockpot, not sure if it was my. Rams or my crockpot but my beans were ready on the 12hr mark!!

Home made breakfast bowls

Hi there!!

Thanks for heading over to our blog, today for dinner I decided to make breakfast bowls  for dinner. I have a recipe video posted on YouTube so feel free to check that out. So I won't keep you hanging and I will share with you the recipe.

1 lb of ground sausage
1 cup of cheese (shredded)
3 small potatoes cooked and cubed
16 eggs scrambled
Onion flakes, garlic powder, Italian seasoning

Cook your sausage and drain all the grease from it
Scramble all your eggs
Add your potatoes and eggs and sausage and then cheese, I forgot to mention add your seasoning to the sausage when it's cooking.

I served mine with blueberry wheat waffles and bananas.

Hope you guys enjoy this and make them. They truly cost less and are more healthy and above all you get tons more. So here is the breakdown.

Sausage I got from Walmart it was $1.99
Eggs I got for $1.50 for 16
Potatoes less than $1
Cheese was from bjs 2 pack for $6.99 so it was $3.50
My total was almost $8
It fed 10 people so that's a steal!
